Liver Fry - Spicy
Pan-fried until the edges go dark and crispy, this chicken fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 1/2 kg Liver chicken or beef or mutton
- 2 nos Onion sliced, big
- 3 tbsp Pepper powder
- Salt, to taste
- 4 tbsp Oil
- 2 Stem Curry leaves
- 1 tsp Garam masala
Preparation
Step 1
Cut the liver into medium pieces and wash it well.
Step 2
Marinate the liver with salt and pepper powder and keep it for half an hour.
Step 3
Cook the liver with very little water and make sure that there is no water left when the liver is done.
Step 4
Set a pan over medium heat and pour in the oil.
Step 5
Add the curry leaves.
Step 6
When it becomes crispy, add sliced onion along with little salt and cook until it becomes light brown.
Step 7
Add the cooked liver and mix it slowly so that the liver will not get mashed.
Step 8
Sprinkle the garam masala over the dish and cover it with a lid and keep it on low heat for about 15 minutes.
Step 9
Remove from fire.
Step 10
Serve while still hot with chappathi, parotta or appam.
Tip
Bone-in chicken gives a richer, more flavourful gravy than boneless. The marrow flavours the curry as it cooks.
