Ladies Finger Curry
This homestyle mixed curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 3 servings
- 10 nos Ladies finger Vendakka
- 1 nos Onion
- 4 nos Green chillies
- 1/4 tsp Turmeric
- 1/4 tsp Cumin seeds (Jeerakam)
- 1 nos Tomato — cubed
- Curry leaves, a few
- 1/2 tsp Mustard seeds
- Coconut Milk (Dissolve 4 tbsp coconut milk powder in 1 teacup of hot water
- Oil, to taste
- Salt, to taste
Preparation
Step 1
In a wok heat oil and let the mustard seeds crackle and cumin seeds. cook onions till translucent and add green chillies. Add required salt. :- Do not over fry the onions.
Step 2
Add ladies finger and sautT for a few minutes.
Step 3
Add coconut milk and turmeric powder.
Step 4
Add tomato and allow to boil. Do not add any water. Check salt and add more if required.
Step 5
Cover and Let it cook for 3 minutes.
Step 6
Add curry leaves. Put the lid on and cook for another 2 minutes. Serve hot with rice.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
