Kuttanadan Pacha Kurumulagu Mathi Fry | Kuttanadan Fish Pepper Fry
The essence of Kuttanadan cuisine with this spicy and aromatic Kuttanadan Pacha Kurumulagu Mathi Fry.
Ingredientsfor 4 servings
- 6-8 nos Sardines /Chaala/Mathi Medium size
- 2 nos Green peppercorns Strings of fresh, paccha kurumulagu
- 1 Clove Garlic
- 1/4 inch Ginger
- Curry leaves, a few
- 1/4 tsp Turmeric powder
- Salt, to taste
- Coconut oil — for frying
Preparation
Step 1
Grind fresh peppercorns with ginger, garlic, turmeric, curry leaves and salt to a fine paste to prepare marinade.
Step 2
Slit the fish on the either sides and marinate the fish by applying a coat of the mixture on the fishes.
Step 3
Keep the fish aside for 2 hrs.
Step 4
Warm coconut oil in a pan.
Step 5
Place the fish gently and pan-fry till browned.
Step 6
Flip each side and fry till done.
Step 7
Pacha Kurumulagu Arachu Mathi Varuthathu(Kuttanadan Pepper fish fry) is ready!:- Serve the fish hot! Tips: Overcooking the fish will make it very crispy.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
