Kovakka Fry | Tindora Fry
A styled fry dish, very popular in Kerala. Kovakka or Tindora is a vegetable locally available and widely available in Kerala. A spicy fried dish that goes well with hot rice.
Ingredientsfor 3 servings
- 3 cup Tindora/Ivy Gourd Kovakka
- 1/4 cup Shallots — chopped (Kunjulli)
- 1 tsp Red pepper — crushed
- 2 Cloves garlic — crushed
- 9-10 Coconut pieces — thinly sliced
- 1 Tbsp/as Oil
- 1/4 tsp Mustard seeds
- 1/4 tsp Turmeric powder
Preparation
Step 1
For preparing the healthy dish, first wash kovakka and drain. Cut off the stem and slice into long pieces. Ripe ones should be discarded.
Step 2
Heat oil and let the mustard seeds crackle. Add chopped shallots, crushed red pepper, garlic and the coconut pieces.
Step 3
Cook well until the shallots are golden brown. Add turmeric powder.
Step 4
Stir and add the kovakka/tindora slices. Add required salt and cook in medium flame until done.
Step 5
Do not add water and let any remaining water dry completely.
Step 6
Your Tindora fry is ready and serve hot with rice.
Tip
The final handful of curry leaves should go in right at the end, off the heat — they should crackle and crisp in the residual heat.
