Koottu Curry
This homestyle banana curry is built on a foundation of shallots fried dark in coconut oil and spices toasted until they release their full aroma. It tastes even better the next morning, spooned over cold leftover rice.
Ingredientsfor 5 servings
- 1/2 cup Bengal gram (Kadalaparippu)
- 1 nos Raw banana Pachha kkai
- 100 g Elephant yam Chena
- 100 g Cucumber (Kumbalanga)
- 100 g Snake gourd Padavalanga
- 1/4 tsp Turmeric powder
- Salt, to taste
- 1 cup Coconut — grated
- Pepper A, a few
- 1/2 tsp Red chilly powder
- 1 nos Garlic pods
- Curry leaves A, a few
- 2 tbsp Coconut oil
- Mustard seeds A pinch
- 1 nos Dry red chilly (Kollamulaku)
- 1 Stalk Curry leaf
- 4 tbsp Coconut — grated
Preparation
Step 1
Cook the dal with water and turmeric powder, until tender. Mash lightly.
Step 2
Cook the vegetables with salt and turmeric powder.
Step 3
Heat a tsp of coconut oil in a pan.
Step 4
Fry the grated coconut.
Step 5
When it turns light brown, add the rest of the ingredients and fry for a while.
Step 6
Grind them together into a coarse paste.
Step 7
Add the cooked dal and the ground paste into the vegetables and allow to boil.
Step 8
Stir everything together thoroughly and remove from fire.
Step 9
Warm coconut oil in a kadai or a pan.
Step 10
Add mustard seeds, curry leaves and red chilly.
Step 11
When it begins to allow to crackle, add the grated coconut and fry it until golden brown.
Step 12
Add the seasoning into the curry and Stir everything together thoroughly.
Tip
Coconut oil and curry leaves at the very end, off the heat, give the curry its characteristic Kerala aroma. Never skip this final step.
