Koonthal Varutharachathu

Ingredientsfor 5 servings
- 250 g Koonthal
- Ginger — sliced
- 25 nos Garlic
- 2 nos Green chilli
- 10 nos Small onion
- 1 nos Onion
- 1 nos Tomato
- 1/2 Part Grated coconut
- 11/2 tbsp Chilly powder
- 1 tbsp Corriander powder
- 1/2 tbsp Turmeric powder
- 4 tbsp Coconut Oil
- 3 nos Cardamom and Grampu
- Cinnamon small piece
- Salt for taste
- Curry leaves
Preparation
Step 1
Fry the grated coconut, small onion 5nos, curry leaves a bit, ginger, garlic, grampus, cinnamon, cardamom to brown in colour and make a smooth paste.

Get a kadai, add oil rest of small onion, green chillies, onion and tomato,sourte well,Then add Chilli powder, coriander powder and turmeric to the same along with curry leaves, sourte well Then add Koothanthal Sourte well.

Finally add the coconut paste and let it cook till the oil seperates,Koonthal varutharachathu ready now.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
