Kerala Vazhachundu Thoran | Banana Flower Stir Fry
A dish prepared from banana flower, very popular in Kerala. Banana plants are a common sight in Kerala, God’s Own Country. Kerala Vazhachundu Thoran goes perfect as a side dish with hot rice.
Ingredientsfor 3 servings
- 1 nos Vazhachundu Kudappan
- 150 g Whole Green gram Cherupayar
- 1/2 Of Coconut — grated
- 3 nos Green chillies
- 1/2 tsp Turmeric powder
- 4 nos Garlic cloves
- 1/2 tsp Cumin seeds (Jeerakam)
- 2 tbsp Coconut oil
- 1 tsp Mustard seeds
- Curry leaves, a few
- Salt, to taste
- 2 nos Dry red chillies (Kollamulaku)
- 1 tbsp Plain rice Puzhukkalari (Pachari)
Preparation
Step 1
For preparing Kerala Vazhachundu Thoran, first clean the whole green gram well and remove the unwanted stuff from it.
Step 2
Cook it separately with water in a pressure cooker.
Step 3
Make sure u don't overcook it.
Step 4
Remove the first 3 to 4 outer covering of the vazhachundu and chop the rest very finely as you do for thoran.
Step 5
Add coconut oil and turmeric powder into the above chopped kudappan and Stir everything together thoroughly the whole thing using your hands.
Step 6
This is done to remove the kudappan's serum.
Step 7
Place together the grated coconut, green chillies, garlic, cumin seeds and curry leaves in a mixer bowl and run it once to make it into a coarse form.
Step 8
Mix it along with the chopped kudappan mixture.
Step 9
Pour oil into a pan and heat it or a kadai.
Step 10
Let the mustard seeds crackle and cook dry red chillies, rice and curry leaves.
Step 11
Add the kudappan mixture and Stir everything together thoroughly.
Step 12
Put the lid on and cook on a low flame.
Step 13
After about 3 minutes, remove the cover and add the cooked green gram into this and Stir everything together thoroughly.
Step 14
Continue cooking without the lid on, till done.
Step 15
Make sure Kerala Vazhachundu Thoran doesn't get mashed. :- You can also add Red gram (Van Payar) instead of Whole green gram or Cherupayar.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
