Kerala Urad Dal Vada
Split black gram is ground into a fine paste and then fried in hot oil.
Ingredientsfor 5 servings
- 1 cup Split black gram parippu (Uzhunnu)
- 4 nos Green chillies chopped finely
- 5 nos Curry leaves chopped finely
- 1/4 tsp Asafoetida powder (Kayam)
- 1/2 tsp Pepper powder
- Oil, to taste
- Salt, to taste
Preparation
Step 1
For preparing kerala urad dal vada, soak split black gram for two hours.
Step 2
Wash the split black gram and grind with green chillies, curry leaves, asafoetida, pepper powder and salt.
Step 3
Kindly ensure that no water is added. You should be able to get a thick dough.
Step 4
Heat the oil in a thick bottomed pan.
Step 5
Get spoonfuls of the vada mixture and add it into the hot oil.
Step 6
Immediately, make a hole in the center of the batter with a steel stick or back of a steel spoon.(This should be done in the hot oil to get the shape right) 7)Kerala urad dal vadas are ready. Serve hot with chutney for breakfast.
Tip
Jaggery burns easily. Melt it on low heat and always strain it to remove grit before adding it to the mixture.
