Kerala Ulli Vada | Onion Vada
Sweet, rich, and deeply satisfying — this is the snack that shows up at every Kerala celebration, temple festival, and Onam Sadya. Made with jaggery, coconut, and patience.
Ingredientsfor 4 servings
- 3 large Onion
- 3 nos Green chilly
- Ginger small pc
- 1 handful Curry leaves
- 1 tbsp Gram flour
- 2 tbsp All purpose flour
- 1/4 tsp Garam masala
- 1/2 tsp Turmeric powder
- Salt, to taste
- Oil — for frying
Preparation
Step 1
For preparing Kerala Ulli Vada, take a vessel and add sliced onion, crushed ginger, chopped green chilly and curry leaves.
Step 2
Squeeze well with hand by adding required salt.
Step 3
Add gram flour and all purpose flour.
Step 4
Mix it well and make the batter, sprinkle some water only if needed.
Step 5
Crispy and Road side onion vada is ready.
Tip
The binding point is everything — cook the mixture just until it holds shape when pressed. Overcooked, it turns hard; undercooked, it crumbles.
