Kerala Tuna Roast
A proper Kerala fry — mixed tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 3 servings
- 1 nos Tuna tinned
- 2 nos Onion — chopped
- 1 nos Tomato
- 4 - Green chillies
- 5 nos Garlic pods
- 1 tsp Mustard seeds
- Curry leaves A, a few
- Coriander leaves A, a few
- 2 tbsp Cumin powder (Jeerakam)
- 1/2 tsp Turmeric powder
- 1 tbsp Red chilly powder
- Oil
- Salt, to taste
Preparation
Step 1
Pour oil into a pan and heat it.
Step 2
Add mustard seeds and when they crackle, add curry leaves.
Step 3
Add the chopped onions, garlic, green chillies and salt and cook it, stirring well.
Step 4
Add chopped tomatoes and coriander leaves and cook it, stirring for 2 minutes.
Step 5
Add the fish without water and let it go for 2 minutes.
Step 6
Add cumin powder, red chilly powder and turmeric powder and cook it well fo 7 to 10 minutes.
Step 7
Switch off the stove.
Step 8
Garnish with coriander leaves.
Step 9
Goes well with roti and rice.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
