Kerala Traditional Prawns Fry
Kerala-style dry fry where prawn is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- 1 cup Prawns
- 1 Onion
- 1 tsp Coriander powder
- 1 tsp Chili powder
- 1 tsp Salt
- 1 tsp Ginger garlic paste
- 1 tsp Turmeric powder
- 2 tsp Coconut oil
- 5 Curry leaf
- 1 cup Water
Preparation
Step 1
Cook prawns with 1 cup water for 5 minutes.When it is cooked,drain the water and set aside.
Step 2
Set a kadai over medium heat and pour in the oil. Add onions and Let it cook for 2 minutes.
Step 3
Add coriander powder,chili powder and turmeric powder,cook for a minute.
Step 4
Add cooked prawns to this and cook for a minute.
Step 5
Add chili powder,salt and curry leaves,cook for a minute.
Step 6
Now kerala traditional prawns fry is ready.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
