Kerala Tasty Pepper Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 6 servings
- 1 kg Chicken — cut into medium pieces
- 2 nos Onion sliced thinly, large
- 2 nos Tomato sliced thinly, medium
- 2 tbsp Peppercorns Kurumulaku
- 2" piece Ginger
- 10 nos Garlic pods
- 8 nos Red chillies (Kollamulaku)
- 1 tbsp Coriander powder
- Cinnamon A small piece (Karugapatta)
- 5 nos Cloves (Grambu)
- 1/2 tsp Turmeric powder
- 1/4 cup Oil
- Salt, to taste
Preparation
Step 1
Grind together half of sliced onions, ginger, garlic, coriander powder, red chillies and peppercorns into a fine paste.
Step 2
Marinate the chicken pieces with the above masala along with salt for 1 hr.
Step 3
Pressure cook the marinated chicken upto 1 whistle.
Step 4
Warm the oil in a pan or a kadai.
Step 5
Add cinnamon and cloves and stir for a few secs.
Step 6
Add the remaining onions and sauté, till they turn soft.
Step 7
Add turmeric powder followed by tomatoes and sauté, till it becomes pulpy.
Step 8
Add the cooked chicken and Stir everything together thoroughly.
Step 9
Cook, till the gravy thickens.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
