Kerala Tasty Chicken Curry
A deeply satisfying kerala tasty chicken curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 1 kg Chicken
- 4 nos Onions — finely sliced
- Ginger garlic paste - 2 tbsp
- 2 nos Tomato — chopped
- 2 nos Green chillies
- 21/2 tsp Coriander powder
- 11/2 tsp Chilly powder
- 1 tsp Garam masala powder
- 1 cup Thin coconut milk
- 1 cup Thick coconut milk
- Curry leaves A, a few
- Oil, to taste
- Salt, to taste
- Mustard seeds
- Dried red chillies
- Onions — chopped
- Curry leaves
Preparation
Step 1
Grind together all the ingredients for coconut mixture.
Step 2
Warm the oil in a pan.
Step 3
Add onion, ginger-garlic paste, green chillies and curry leaves and fry till brown.
Step 4
Add tomatoes and fry till oil is visible.
Step 5
Add coriander powder, chilly powder and garam masala powder and cook, stirring often, for a few minutes.
Step 6
Add cleaned chicken, salt and Stir everything together thoroughly.
Step 7
Add thin coconut milk and cook till the chicken is done.
Step 8
Mix the ground coconut mixture and bring to boil.
Step 9
Add thick coconut milk.
Step 10
Add the tempering with mustard seeds, dried red chillies, chopped small onions and curry leaves. Kerala Chicken curry is ready.
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
