Kerala Style Vegetable Fried Rice
one of the easiest vegetarian dishes prepared with basmati rice and a choice of healthy vegetables. No soy sauce is used in Kerala Style Vegetable Fried Rice and hence different from Indo-Chinese dishes.
Ingredientsfor 4 servings
- 2 cup Basmati rice
- Ghee/Butter to fry
- Vegetables
- 1/4 cup Carrot, Beans, Green peas carrot & beans cut to 1/2 inch long pieces
- 10 nos Raisins & Cashews
- 1 tsp Garam masala
- Ginger garlic paste – 1 tsp
- 1/4 Of Onion – 2 nos(chopped lengthwise large
- 4 nos Green chillies – 3 chopped lengthwise
- 1/2 tsp Lemon juice
- Water to boil the rice
- Coriander leaves Few — finely chopped
- 3 tbsp Oil – 2
- Salt, to taste
Preparation
Step 1
For preparing Kerala Style Vegetable Fried Rice, first wash the rice and spread it out to let the water drain.
Step 2
Pour ghee into a hot kadai.
Step 3
Add ginger-garlic paste and rice and fry it. Keep the fried rice aside.
Step 4
The mixture of ginger garlic and Basmati rice smells very good!
Step 5
Add oil to a pan and fry 3/4 of the chopped onions and green chillies.
Step 6
Add garam masala and vegetables also and stir fry.
Step 7
Once they are half cooked, add the rice that was kept aside and add 2 cups of water.
Step 8
Close the container and let the rice and vegetables cook together.
Step 9
Heat some ghee in a kadai.
Step 10
Fry the raisins and cashews and set aside.
Step 11
Fry the rest of the onions to crisp.
Step 12
It will become dark brown in colour.
Step 13
After the rice is cooked, pour lemon juice and mix.
Step 14
Transfer the kerala style fried rice to a serving bowl and decorate with fried onions, raisins and cashews and the chopped coriander leaves on top.
Step 15
Making Time of Kerala style vegetable fried rice : 25-30 minutes.
Step 16
Serve the vegetable fried rice with raitha, papad, and lemon pickle to vegetarians. Add with boiled egg or chicken curry for the non-vegetarians.

Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
