Kerala Style Tomato Rice
A one-pot rice dish that brings together grains, spices, and vegetables or meat in a single satisfying meal. The rice absorbs every flavour in the pot and comes out fragrant, colourful, and complete.
Ingredientsfor 3 servings
- 1 cup Basmati rice
- 3 nos Tomato — cut into small pieces, large
- 2 tsp Turmeric powder
- 1 tsp Chilly powder
- 1/4 tsp Asafoetida Kaayam
- Salt, to taste
- Oil, to taste
- 1 nos Dry red chilly (Kollamulaku)
Preparation
Step 1
In a bowl mix together the cut tomatoes, turmeric powder, chilly powder, asafoetida and salt.
Step 2
In a wok, add oil and brown the red chillie. Set aside.
Step 3
In the same oil, add the tomato mix and cook on low heat till the tomatoes are well mashed.
Step 4
Add the cooked rice to this mixture and stir slowly to make sure that it does not get too soft but that all are well mixed.
Step 5
Garnish with the red Chillie.

To cook the rice:- 6)In a pot, add the rice and add two cups of boiling water, add juice of one lime and cook till rice is well cooked.
Step 7
If there is any excess water, drain this off very well. If there is any need to add any further water, make sure boiling water is added.
Tip
Soak the rice for at least 20 minutes before cooking. This ensures even cooking and prevents the grains from breaking.
