Kerala Style Pepper Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 3 servings
- 1/2 kg Chicken — cut into small pieces
- 4 nos Tomato — cut into small pieces
- 6 nos Onion — finely chopped
- 1 tsp Ginger paste
- 1 tsp Garlic paste
- 2 tsp Pepper powder
- 1/2 tsp Pepper — crushed
- 1 tsp Chilly powder
- 1 tsp Coriander powder
- 1 pinch Garam masala
- Oil, to taste
- Salt, to taste
- Curry leaves
- 5 tsp Ghee
Preparation
Step 1
Pour oil into a pan and heat it.
Step 2
Cook the chopped onion till golden brown.
Step 3
Add tomatoes and cook till its mashed.
Step 4
Add the cleaned chicken, salt and turmeric.
Step 5
Stir everything together thoroughly and cook for about 10 minutes with closed lid in simmer.
Step 6
Add ginger, garlic, pepper powder, garam masala, chilly powder and coriander powder.
Step 7
Stir everything together thoroughly and cook for 10 more mins with closed lid.
Step 8
If in a hurry, u can omit ginger-garlic paste. The curry still would be tasty.
Step 9
Pour ghee, add crushed pepper and curry leaves.
Step 10
Stir everything together thoroughly and cook for about 2 minutes Serve hot.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
