Kerala Style Egg Masala
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- 2 nos Eggs
- 2 nos Onions medium
- 1 tsp Eastern chicken masala
- 1/2 tsp Chilly powder
- 1 tbsp Tomato ketchup or sauce
- 1/2 tsp Mustard seeds
- 2 tbsp Oil
- Salt, to taste
Preparation
Step 1
Boil eggs and make slits using a knife and set aside.
Step 2
Pour oil into a pan and heat it or a kadai.
Step 3
Let the mustard seeds crackle.
Step 4
Add onions and sauté, till they become tender.
Step 5
Add masala, chilly powder, tomato ketchup and salt.
Step 6
Add little water and Stir everything together thoroughly.
Step 7
Cook for about 5 minutes or until gravy becomes thick.
Step 8
Add eggs and Stir everything together thoroughly.
Step 9
Goes well with appam, chappathis, idiappams etc.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
