Kerala Style Duck Roast
A proper Kerala fry — duck tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- Ingredients for Duck Roast
- 2 kg Duck
- 3 tbsp Coriander powder
- 11/2 tbsp Red chilly powder
- 1 tsp Black pepper Kurumulaku
- 2 tbsp Ginger 2 inches)(cut into thin slices
- 10 nos Whole red chilly (Kollamulaku)
- 2 tbsp Garam masala
- 1 tsp Turmeric powder
- 2 large Curry leaves
- Salt, to taste
- 4 nos Onion — cut into thin slices, medium
- ½ cup Coconut oil
- 1½ cup Hot water
- 6 nos Potato cooked and fried)(whole, small
- 6 nos Baby carrots cooked
- Cabbage leaves uncooked
Preparation
Step 1
Preparation Method for Duck Roast 1)Skin and cut the duck. Wash and soak them in salt and turmeric and set aside for a while.
Step 2
Heat 1/4 of coconut oil in a pan.
Step 3
Add peppercorns(whole) and the onion slices. cook them until it becomes transparent.
Step 4
Mix together the coriander powder, chilly powder, garam masala, turmeric powder and salt along with little water.
Step 5
Add the above paste and cook the ingredients until the oil begins to separate.
Step 6
Crush the whole red chillies to flakes and add them to the masala.
Step 7
Add curry leaves.
Step 8
Get the meat after washing the turmeric off and drain.
Step 9
Add the meat, lower the heat, Put the lid on and cook until the water separates.
Step 10
Pour about 11/2 cups of hot water, Put the lid on and cook until meat is cooked and all the water disappears.
Step 11
UnPut the lid on and cook for another 10 minutes, if there is any water left.
Step 12
On a flat frying pan, pour 1/4 cup of coconut oil and fry the meat until brown in colour and all the extra water disappears or until the meat is almost dry.
Step 13
Get a flat dish, preferably a round large pie dish.
Step 14
Arrange the cabbage leaves covering the entire dish and arrange the meat pieces in the center leaving a little space between dish and the meat.
Step 15
Arrange the fried potatoes and carrots around the Duck Roast meat.
Step 16
Duck Roast is ready. Server Duck Roast hot.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
