Kerala Special Chicken Roast
A proper Kerala fry — chicken tossed with shallots, curry leaves, and ground spices until each piece is dry, dark, and packed with heat. The coconut oil is not optional.
Ingredientsfor 4 servings
- 1 kg Chicken
- 300 g Onions
- 3/4" piece Ginger — chopped
- 3 nos Green chillies — slit
- 1/2 cup Coconut milk
- 2 Stems Curry leaves
- 10 nos Cashews
- 21/2 tsp Chilly powder
- 11/2 tbsp Coriander powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Garam masala powder
- 1/2 cup Oil
- Salt, to taste
- Coriander leaves — for garnishing
Preparation
Step 1
Cut chicken into medium sized pieces.
Step 2
Marinate chicken pieces with 1 tsp of chilly powder, a pinch of turmeric powder and salt for about 30 minutes.
Step 3
Warm the oil in a pan.
Step 4
Fry the marinated chicken, till it goes golden brown.
Step 5
Remove the chicken from the oil.
Step 6
Grind the cashews to a paste in coconut milk. Keep the coconut mixture aside.
Step 7
Heat up the remaining oil in the same pan.
Step 8
Add onion, ginger, green chillies, curry leaves and fry, till golden brown.
Step 9
Add the remaining chilly powder, turmeric powder, coriander powder, garam masala powder and heat for a while.
Step 10
Put the fried chicken pieces into the pan along with coconut milk mixture and Stir everything together thoroughly.
Step 11
Season with salt.
Step 12
Cook for few minutes, until the coconut milk is fully absorbed.
Step 13
Garnish with coriander leaves. Serve hot.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
