Kerala Simple Tomato Chicken
Tender chicken pieces cooked in a thick, spice-heavy gravy built on caramelised shallots and coconut oil. This is the kind of Kerala chicken dish that families argue about — whose mother makes it better.
Ingredientsfor 2 servings
- 1/2 Lb Chicken — cut into small pieces
- 2 tsp Chilly powder
- 1/2 tsp Turmeric powder
- 1 nos Onion
- 2 nos Tomato blended without water
- Ginger garlic paste - 1 tsp
- 1 tsp Chilly sauce
- 1 tsp Soya sauce
- 1 tsp Tomato sauce
- 4 nos Green chillies — sliced
- 2 tsp Pepper powder
- Oil — for frying
- Salt, to taste
Preparation
Step 1
Mix chicken with salt, turmeric powder, chilly powder and 1 tsp of pepper powder. Keep it for 30 min.
Step 2
Pour oil into a pan and heat it.
Step 3
Fry chicken well. Set aside.
Step 4
Heat the oil in another pan.
Step 5
Add ginger-garlic paste and cook for 3 min.
Step 6
Add chopped onion and fry, till it becomes brown.
Step 7
Add fried chicken pieces and chillies and fry for 5 min.
Step 8
Add ground tomato along with salt and cook for another 5 min.
Step 9
Add pepper powder, chilly sauce, tomato sauce and soya sauce.
Step 10
You can add more pepper powder according to you taste.
Tip
Marinate for at least 30 minutes if you can — the spices penetrate deeper and the chicken stays juicier.
