Kerala Simple & Tempting Chicken Curry
A traditional Kerala curry where chicken simmers gently in a spiced coconut gravy until every piece soaks up the flavours. The curry leaves and raw coconut oil finish add that characteristic Kerala fragrance.
Ingredientsfor 4 servings
- 1 kg Chicken
- 2 tsp Red chilli powder
- 1/2 tsp Pepper
- 1/4 tsp Turmeric powder
- Salt, to taste
Preparation
Step 1
Wash the chicken and cut it into bite pieces.
Step 2
RUb the chilli power,pepper,turmeric poder and salt to the chicken. 3)TAke a kadai put a t ablespoon of oil n put in the marinated chicken.Keep o high flame for 5 minutes. 4)Lower the flame and add about 250 ml water n let it Put the lid on and cook until it is cooked.All the water should be dried up :- i often don`t add water as chicken cooks without water due to the fat in chicken and there`s no need of adding oil too.
Step 3
If u want, u can cook 1 onion and one tomato and add chicken to it.
Tip
Let the curry rest for at least 15 minutes after cooking — the flavours deepen as it sits. Reheated curry almost always tastes better than fresh.
