Kerala Simple & Nice Chicken Fry
Pan-fried until the edges go dark and crispy, this chicken fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 6 servings
- 1/2 kg Chicken
- 1 tbsp Garlic paste
- 2 tbsp Chilly powder
- 1 tsp Coriander powder
- 1/2 tsp Turmeric powder
- 1 tsp Garam masala powder
- Ajinomotto — optional
- 1 tsp Pepper powder
- Red color A pinch
- 2 tbsp Vinegar
- Salt, to taste
- Oil — for deep frying
Preparation
Step 1
Clean and cut chicken into medium pieces.
Step 2
Mix together all the ingredients.
Step 3
Marinate the chicken with the above mixture atleast for 1 hour.
Step 4
Fry in hot oil them in oil.
Step 5
Cover, while frying.
Step 6
Fry, till they become dark red colour.
Step 7
Serve while still hot with fresh lemon pieces and onion rings.
Tip
Do not boil the curry hard after adding coconut milk. A gentle simmer is all you need — vigorous boiling can cause the coconut milk to split.
