Kerala Simple Mushroom Thoran
Kerala style Mushroom thoran - Kerala Simple Mushroom Thoran.
Ingredientsfor 2 servings
- 250 g Mushroom — cut into small pieces
- 1 nos Onion finely chopped, large
- 1 cup Coconut — grated
- 2 nos Red chillies (Kollamulaku)
- 1 tsp Cumin seeds (Jeerakam)
- 2 nos Garlic pods
- 1/2 tsp Turmeric powder
- 1/2 tsp Mustard seeds
- 1 tsp Black gram (Uzhunnuparippu)
- Curry leaves A, a few
- Salt, to taste
- 2 tbsp Oil
Preparation
Step 1
Grind together coconut, red chillies, garlic, cumin seeds and turmeric powder into a coarse paste.
Step 2
Heat a tbsp of oil in a pan or a kadai.
Step 3
Stir fry the mushrooms, until they are cooked and set aside.
Step 4
Pour remaining oil into the kadai.
Step 5
Let the mustard seeds crackle.
Step 6
Add black gram and curry leaves and chopped onion and sauté, till they goes golden brown.
Step 7
Add the ground mixture and cook for 2 - 3 seconds.
Step 8
Add salt and Stir everything together thoroughly.
Step 9
Add mushrooms and cook again for 1 - 2 minutes.
Tip
Grated coconut goes in last and cooks just long enough to warm through. Overcooking makes it chewy instead of soft.
