Kerala Paneer Masala
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 5 servings
- 2 cup Paneer cubed and fried in oil
- 1 cup Cashew nuts — soaked in water and grind
- 1 nos Onion — chopped
- 3 nos Green chillies — slit
- 3 nos Cardamom (Elakka)
- 4 nos Cloves
- 6 nos Pepper corns
- 1 tsp Cumin seeds (Jeerakam)
- 1 nos Tomato
- 2 tsp Chilly powder
- 1 tsp Turmeric powder
- Salt, to taste
- 1 tbsp Coriander powder
- Coriander leaves, a few
Preparation
Step 1
For preparing Kerala Paneer Masala, first Heat the oil in a pan and fry onion, cardamom, cloves, pepper corns, cumin seeds and chilly powder.
Step 2
Cool the fried mixture and when cooled, grind it and set aside.
Step 3
Heat the oil in same pan and fry the ground masala.
Step 4
Add chopped tomato, turmeric powder, coriander powder and salt.
Step 5
When the oil starts to show up, add paneer pieces and cook well.
Step 6
Add little water and cook till paneer pieces are cooked.
Step 7
Add cashew paste and simmer for 5 minutes.
Step 8
Take it off the heat. and serve hot. Decorate Kerala Paneer Masala with coriander leaves.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
