Kerala Olan Curry
This is a kerala side dish. kerala olan is made with pumpkins cooked in coconut milk, which gives it a rich and creamy texture.
Ingredientsfor 4 servings
- White pumpkins chopped 1 cup
- Yellow pumpkins chopped 1 cup
- Green chillies 5
- Salt
- Cooked cow peas 1 cup
- Curry leaves
- Thin and thick coconut milk 1 cup each
- Rice flour 1 sp — optional
Preparation
Step 1
Chop both white and yellow pumpkins and cook in water.
Step 2
Add green chillies.
Step 3
Add salt.
Step 4
Add cooked cow peas.
Step 5
Add curry leaves.
Step 6
Add thin coconut milk and let boil 2 minutes.
Step 7
Add thick coconut milk let boil 2 minutes.
Step 8
Add rice flour mix if need to thicken and serve.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
