Kerala Maladu
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 10 servings
- 2 cup Splitpea that has been fried in ghee smeared pan Pottu kadala — powdered
- 2 cup Sugar — powdered
- 1/2 cup Cashew nuts sauteed in ghee and then — powdered
- 3/4 - Hot Ghee
Preparation
Step 1
Pottukadala and sugar should be sieved well after powdering.
Step 2
The measurement is written for the quantity after it has been sieved.
Step 3
Mix together the powdered ingredients with sauteed cashews.
Step 4
Divide the mix into 3 equal parts. 4)Pour equal quantity of ghee into each portion and make small balls out of it.
Step 5
If you feel ladoos are too loose, then add some more ghee to the mix.
Step 6
Tips:- Make sure to divide the mix, this will help to concentrate on small quantity at a time and the mix won`t soak up the ghee.
Tip
Do not rush the onion and shallot frying. The difference between pale onions and properly browned onions is the difference between a flat dish and a flavourful one.
