Kerala Kaalan
Straightforward Kerala cooking — good ingredients treated well, spiced with confidence, and served without pretence. The kind of food that tastes like someone's kitchen, not a restaurant.
Ingredientsfor 5 servings
- 1 nos Raw plantain Nendra kaya
- 1 cup Yam/Chena — chopped
- 2 cup Curd
- 1/2 Of Coconut
- 5 nos Pepper
- 1 nos Green chilly
- 1/2 tsp Red chillies
- 1/2 tsp Turmeric powder
- 1/4 tsp Cumin seeds (Jeerakam)
- Salt, to taste
- 1 sprig Curry leaves
- 1/4 tsp Mustard seeds
- 10 nos Fenugreek seeds (Uluva)
- 2 nos Dry red chillies — chopped
- 1 sprig Curry leaves
- 2 tsp Oil
Preparation
Step 1
Peel and cube the plantain and yam.
Step 2
Set a kadai on the stove, add plantain and yam pieces along with turmeric powder, chilly powder, salt, curry leaves and 1 cup of water.
Step 3
Cook till the vegetables are done.
Step 4
Meanwhile, grind together coconut, pepper, cumin seeds and green chilly to a fine paste.
Step 5
Add this paste to the cooked vegetables.
Step 6
Boil them well stirring continuously.
Step 7
Add salt.
Step 8
Finally add curd to this and simmer for 2 - 3 minutes.
Step 9
Do not boil.
Step 10
Let the mustard seeds crackle, red chilly, fenugreek seeds and curry leaves in a pan.
Step 11
Add this to the gravy.
Step 12
The simple and Kaalan is ready to be served.
Step 13
It is good to use bit sour type curd for preparing this dish.
