Kerala Easy Chicken Fry
Pan-fried until the edges go dark and crispy, this chicken fry is the kind of dish you eat standing in the kitchen before it ever reaches the table. Dry-roasted with spices and finished with a fistful of curry leaves.
Ingredientsfor 4 servings
- 1/2 kg Chicken
- 1 nos Onion — cut into slices, big
- 1 nos Tomato — cut into slices
- 2 tbsp Chilly powder
- 1/2 tsp Turmeric powder
- 1 tsp Pepper powder
- Salt, to taste
- Curry leaves Atleast 5 sprigs
- Coconut Oil/Sunfower Oil, to taste
Preparation
Step 1
Cut the chicken into medium pieces.
Step 2
Place a pan on the stove (preferably Non stick pan) and put chicken, onion, tomato, chilly powder, turmeric powder, pepper powder and salt and gently mix together.
Step 3
Pour water to the same level of chicken.
Step 4
Heat the pan (maximum level) and keep until all the water dries up.
Step 5
The gravy will stay thick on the chicken.
Step 6
Pour oil to this content to fry in hot oil it and put it in sim atleast for about 20 minutes.
Step 7
Keep adding each sprig of curry leaves every 5 minutes.
Step 8
The more you add, the more it tastes.
Step 9
Squeeze lemon on it finally to give better taste.
Tip
Coconut oil is not optional in a Kerala fry. It adds a flavour that no other oil can replicate.
