Kerala Cauliflower Masala
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 3 cup Cauliflower florets
- 3 nos Green chillies
- 1 nos Onion medium
- 1/2 tsp Chilli powder
- 1 tbsp Coriander powder
- 1/2 tsp Turmeric powder
- 2 tbsp Oil
- Salt, to taste
- 2 nos Garlic pods — optional
- 2 cup Water
Preparation
Step 1
In a vessel, boil the water and add 1/4 tsp of turmeric powder and add cauliflower florets. let it bubble for 3 minutes. Drain and set aside.
Step 2
Chop the onion, slit green chillies and set aside.
Step 3
Heat the oil in a pan.
Step 4
Add onion and chillies followed by chopped garlic pods and fry for 2 - 3 minutes.
Step 5
Into this, add chilli powder, coriander powder, turmeric powder and salt and fry for another 2 minutes.
Step 6
Add a little water to make a paste.
Step 7
Add the florets and Stir everything together thoroughly with masala and cook for about 8 minutes.
Tip
Taste as you go. Recipes are guidelines — your palate is the final judge. Adjust salt, sourness, and heat to what tastes right to you.
