Kerala Beef Curry | Nadan Beef Curry
A quintessential representation of Kerala’s culinary brilliance, combining a medley of spices, tender beef, and unique cooking techniques of the region.
Ingredientsfor 5 servings
- 1 kg Beef
- 8 nos Dry red chillies (Kollamulaku)
- 3 tsp Coriander seeds
- 1 tsp Black pepper
- 2 piece Cinnamon(small (Karugapatta)
- 6 nos Cloves (Grambu)
- 1 tsp Fennel seeds (Perinjeerakam)
- 1 cup Pearl onions (Kunjulli)
- 2 nos Onions big
- 10 nos Garlic pods small
- 1 large Ginger
- 2 nos Green chillies
- 2 nos Tomatoes — chopped
- 1/2 tsp Turmeric powder
- Coconut oil, to taste
- Salt, to taste
- 1 Stem Curry leaves
- 2 Stem Coriander leaves
Preparation
Step 1
Arrange all the ingredients required for roasting in a plate.
Step 2
Heat the oil in a frying pan. Fry the dry red chillies and set aside. Fry coriander seeds, till its aroma comes out and set aside. Fry black pepper, cinnamon sticks, cloves and cumin seeds together and set aside. Stir fry pearl onions, till they turn brown.
Step 3
Blend all these fried ingredients in a mixer grinder.
Step 4
Pressure cook chopped beef with turmeric powder, salt and the blended mixture.
Step 5
Stir fry onions in the pan, till brown followed by green chillies, crushed garlic and ginger and chopped tomatoes.
Step 6
Add these to the cooked beef and boil well. When the curry turns brown, turn off the heat.
Step 7
Garnish Nadan Beef Curry with curry leaves, coriander leaves and a spoon of coconut oil.
Step 8
The Kerala Nadan Beef Curry with porotta or chapathi or rice or tapioca.
Tip
The coconut pieces should get slightly crispy along with the beef. They add a textural contrast that makes the dish.
