Kerala Beef Curry | Beef Masala
A deeply satisfying kerala beef curry simmered slowly with freshly ground spices and coconut. The kind of gravy that thickens as it rests and rewards patience with layered, rounded flavour.
Ingredientsfor 4 servings
- 1 kg Beef Bite sized pieces
- 1/2 tsp Turmeric powder
- 2 tsp Red chilly powder
- 3 tsp Coriander powder
- 3 tsp Black Pepper Powder
- 6 nos Green chillies — chopped
- 1 small Piece Ginger — crushed
- 4 nos Garlic cloves — crushed
- 3 nos Onion(Medium — sliced
- 3 tsp Freshly Prepared Beef Masala Refer the preparation
- Curry leaves, a few
- Salt, to taste
- 2 piece Cinnamon (Karugapatta)
- 3 nos Cloves (Grambu)
- 1/2 tsp Cumin seeds (Jeerakam)
- 5 nos Pepper cloves
- 1/2 tsp Poppy seeds
- 1 tsp Fennel seeds
- 1 nos Bay leaf
- 2 nos Star anise (Thakkolam)
- 2 nos Cardamom (Elakka)
Preparation
Step 1
For preparing the dish, first wash and drain the beef pieces.
Step 2
Gather all the ingredients under heading: "For Preparing Beef Masala" and dry roast the ingredients in a pan. Cool the ingredients and grind it. Take 3 Tsp of the prepared Masala for the dish.
Step 3
Next, place the drained beef in a pressure cooker.
Step 4
Add all the ingredients for marination except onion and beef masala: turmeric powder, red chilly powder, coriander powder, black pepper powder, chopped green chillies, crushed ginger, garlic and required salt. Stir everything together thoroughly.
Step 5
Keep the beef marinated for about 10 minutes.
Step 6
Add 1/4 cup water and pressure cook for about 20 minutes after the first whistle.
Step 7
Meanwhile, Heat the oil in a kadai and add onions and curry leaves.
Step 8
Add 3 Tsp prepared masala beef masala and cook until the onions start to brown.
Step 9
Stir in the cooked beef mixture to the pan, and cook on medium heat for about 10 minutes. Take care so that the masala does not stick to the bottom of the pan. Oil should float on the surface of the curry dish.
Step 10
Delicious beef curry is ready!
Step 11
Serve beef curry hot with rice or porotta or chapathy.
Step 12
Store prepared Beef Masala in airtight containers.
Tip
Taste the gravy before adding the main ingredient. It should be well-seasoned and balanced on its own — the protein or vegetable will dilute it slightly.
