Kerala Aval Puttu
Steamed layers of rice flour and coconut inside a cylindrical mould — puttu is Kerala morning fuel. It crumbles apart on the plate and soaks up kadala curry, banana, or just a spoonful of sugar and ghee.
Ingredientsfor 3 servings
- 1/2 kg Dry rice flakes/Aval — powdered
- 1 nos Coconut — grated
- 1/2 tsp Cardamom powder
- 1 tsp Sugar
- Salt, to taste
- Water, to taste
Preparation
Step 1
For preparing kerala aval puttu, place the powdered aval in a plate. Add cardamom, sugar, salt and mix with hand.
Step 2
Sprinkle water in between and mix with aval.
Step 3
Get a puttu kutti and place coconut first and aval mixture, then again coconut and steam let it go for 8 minutes.
Step 4
Kerala aval puttu is ready.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
