Kerala Ari Kondattam-Vattal
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 3 servings
- 1/2 kg Raw rice (Pachari)
- 50 g Dry red chillies
- 25 g Cumin seeds Jeeraakam
- 25 g Sesame seeds Ellu
- 1 tbsp Asafoetida powder (Kayam)
- Salt, to taste
Preparation
Step 1
For preparing ari kondattam/vattal, grind together all the ingredients.
Step 2
Next, add 2 litres water and knead well.
Step 3
Put the mixture in the murukku press.
Step 4
Press it over a cloth and sun dry it.
Step 5
Fry in hot oil the dried kondattam in oil and serve Kerala Arikondattam with rice.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
