Kayathond (Plantain Peel) &Payar (cowpea) Upperi
A kerala style side dish prepared with plantain peel. it goes well with rice.
Ingredientsfor 6 servings
- 5 – Kayathond preferably Nenthrakkayatholi
- 1 cup Payar Cowpea
- ½ cup Onion — sliced
- Salt, to taste
- 2 Tspns Red Chilli Powder
- 4 - Coconut/Refined Oil
- 4 – Curry leaves
Preparation
Step 1
Clean the Kayathond (Plantain Peel) well and cut them into pieces.
Step 2
Then cut these pieces further into small, small thin pieces.
Step 3
Put these pieces into water for about 10-15 minutes.
Step 4
Soak the Payar (cowpea) for about half-an-hour time.
Step 5
After about half-an-hour, wash the payar(cowpea) and cook it along with the small pieces of Kayathond(Plantain Peel) and required quantity of Saltin a pressure cooker or a normal vessel. When this mix is cooked well, turn off the heat and remove the pressure cooker/vessel from the stove and keep it separately.
Step 6
Heat the oil in a frying pan and add the sliced onion and stir this Stir everything together thoroughly.
Step 7
When the colour of the onion turns into golden, add some Red Chilli Powder into it, stir and then add the cooked Kaya thond and Payar into it and stir it further.
Step 8
Kayathond and PayarUpperi is ready. This Kaya tholi and Payarupperi can be seved with cooked rice/Chapathi/Poori etc.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
