Kanava Thoran | Squid Thoran
A classic Kerala thoran where mixed meets freshly grated coconut in a quick, dry stir-fry. Mustard seeds crackle in coconut oil, curry leaves crisp up, and the whole thing comes together in minutes.
Ingredientsfor 6 servings
- 1 kg Squid kanava
- 4 tbsp Coconut oil
- 1/2 tsp Mustard seeds
- 1/4 kg Shallots — sliced
- 2 tbsp Ginger — chopped
- 2 sprig Curry leaves — chopped
- 2 Green chilli — chopped
- 1.5 cup Coconut — grated
- 1/2 tsp Turmeric powder
- 1 tbsp Kashmiri chilli powder
- 2 tsp Coriander powder
- 1 tbsp Pepper — crushed
- 1/2 tsp Garam masala
- Salt, to taste
Preparation
Step 1
For preparing the delicious dish, first clean, wash and cut squid into small squares.
Step 2
Roast turmeric powder, chilli powder and coriander powder together in a pan without oil.
Step 3
Mix the roasted masala powders and garam masala with grated coconut (Mix it with hand for better results). Set aside.
Step 4
Warm the oil in a pan and let the mustard seeds crackle. Add sliced shallots, chopped ginger, curry leaves and green chilli. cook until shallots has softened.
Step 5
Stir in squid along with salt and cook for a while. Close it with a lid and keep it on a medium - low flame till squid is done.
Step 6
Now, add the previously prepared coconut masala and crushed pepper. Stir everything together thoroughly, check salt and add more if needed. Cover and keep in a low flame for about 5 to 10 minutes. Remove the dish from fire when it is dry. Serve hot with steamed rice.
Tip
Shred the vegetable as fine as you can — the thinner the cuts, the better the thoran. A sharp knife makes all the difference.
