Kalkandam Bath
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 3 cup Sweet sugar cubes powdered, Kalkandam
- 1 litre Milk
- 2 cup Rice — soaked in water
- 3/4 tsp Cardamom powder
- 4 tbsp Dry fruits fried
- 11/4 cup Ghee
- Saffron A pinch
Preparation
Step 1
For preparing kalkandam bath, soak saffron in milk and Stir everything together thoroughly.
Step 2
Boil milk with 1 cup water.
Step 3
When milk boils, add soaked rice. Cook it in pressure cooker.
Step 4
Mix ghee and sweet sugar cubes in china dish. Add dry fruits and Stir everything together thoroughly.
Step 5
Add it to the milk. Add some more ghee and Stir everything together thoroughly till it thickens. Serve hot.
Tip
Fresh curry leaves make a genuine difference. Dried curry leaves are a poor substitute — if you cannot get fresh ones, increase the quantity and fry them longer.
