Kadumanga
A traditional preparation from Kerala that balances flavour, texture, and aroma in the way that only home cooking can. No two households make it exactly the same, and that is the point.
Ingredientsfor 4 servings
- 2 Raw Mango
- 1 tsp Chilly powder
- 1/4 tsp Turmeric powder
- Water, to taste
- Salt, to taste
- 1/2 tsp Fenugreek seeds
- 1 Slice, Jaggery
- Curry leaves, to taste
- 1/4 tsp Mustard
- Coconut oil, to taste
Preparation
Step 1
Mix mango, chilly powder, turmeric powder, fenugreek seeds, salt and water as needed. Let it boil.
Step 2
Cook mustard and curry leaves in coconut oil.
Step 3
Add sauted mustard and curry leaves and jaggerry to the mango mixture.Let it cook for another 5 minutes.
Step 4
Serve it with rice.
Tip
Let the dish rest for a few minutes after cooking. Flavours settle and meld during this time, and the texture often improves.
