Kadalapparippu Cake
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.

- Kadalapparippu / Split Chick Peas : 1 cup (cooked
- Egg : 5 nos
- Sugar : 12 tsp
- Cashew Nuts : 10 nos
- Dry grapes : 10 nos
Preparation
Step 1
Beat 5 eggs together with sugar for 10 minutes.

Grind well the cooked Kadalapparippu / split chick peas.
Step 4

Step 5
Add this to the egg-sugar mixture.
Step 6
Beat for 20 more minutes (optional : add 2 tsp of butter to this, which softens the cake).
Step 7
Cook in a pan on low heat. (A knife inserted in the middle of the cake must come out neatly) This takes around 30 minutes.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
