Kadala Maavu Halwa
Old-fashioned Kerala sweetmaking — no shortcuts, no substitutes. Jaggery, ghee, and coconut come together through slow cooking and patience into something far greater than the sum of their parts.
Ingredientsfor 3 servings
- Ghee : 1 tsp
- Flour : 1 cup
- Milk : 1 cup
- Sugar : ½ cup
- Nuts, to taste
- Water, to taste
Preparation
Step 1
Heat ghee in a pan.
Step 2
Add Gram flour. Fry till the aroma comes (do not burn).
Step 3
Add milk.
Step 4
Add the chopped cashews.
Step 5
In another pan prepare sugar syrup (sugar mixed in water and boiled).
Step 6
Add the sugar syrup.
Step 7
Mix it well.
Step 8
Serve while still hot or chilled.
Tip
When working with jaggery, always melt and strain it first. Even the best quality jaggery has some grit that needs to be removed.
