Jeeraka Kanji
Broken raw rice, shallots, coconut milk and other ingredients are added to make this healthy kanji - Jeeraka Kanji.
Ingredientsfor 2 servings
- 250 g Broken raw rice Nurukku (pachari)
- 15 nos Shallots (Kunjulli)
- 1 tsp Coriander powder
- 1 cup Coconut milk
- Salt, to taste
- 1 nos Coconut — grated
- 2 tsp Cumin seeds (Jeerakam)
- 1/2 tsp Turmeric powder
- 1 tsp Fenugreek seeds (Uluva)
- Ghee, to taste
Preparation
Step 1
For preparing jeeraka kanji, grind 11 small onions, grated coconut and turmeric powder well using a mixer grinder.
Step 2
Then boil water, add coriander powder, cumin seeds, turmeric powder and fenugreek in it. Cook well(water¦s measure is taken according to the rice).
Step 3
Put the washed broken raw rice to the above mixture of water.
Step 4
When the kanji is cooked well, add the coconut mixture that we had prepared first and stir it well.
Step 5
Add coconut milk to it. give it a good stir and take it out from the flame.
Step 6
Fry four small onions in some ghee.
Step 7
Add the brownish cooked red onions to the prepared jeeraka kanji and boil it again for some time.
Step 8
Jeeraka Kanji is ready. It¦s a healthy food for sick people and during the time of fasting.
Tip
When the recipe says "medium heat," it means medium. Kerala cooking is not about high-flame drama — most of the work happens at a patient, steady temperature.
