Jaggery Dosa - Sweet Dosa
Crispy on the edges, soft in the middle — this jaggery dosa - sweet dosa is a breakfast staple across Kerala. The batter comes together quickly and the dosa cooks in under a minute on a hot tawa.
Ingredientsfor 4 servings
- 1 cup Wheat flour
- 1/4 cup Rice flour Aripodi
- 1/4 cup All purpose flour Maida
- 3 tsp Semolina Rawa
- 1/4 cup Coconut — grated
- 1 cup Jaggery Sharkara
- 2 nos Green cardamom — finely powdered (Elakka)
- Ghee, to taste
Preparation
Step 1
For preparing jaggery dosa, melt jaggery in 2 cups of boiling water and allow it to cool.
Step 2
Combine wheat flour, rice flour, rava, maida, cardamom, and coconut with the melted jaggery to make a fine batter.
Step 3
Spread a ladle full of the above batter on a hot non-stick pan and put 1 tsp of ghee around it.
Step 4
Let it cook on this side for a few minutes, and then turn over to the other side, and put 1 tsp of ghee around it.
Step 5
Wait till the dosa turns brown. take it off the heat.
Step 6
Jaggery dosa is ready.
Tip
The pan must be properly hot before you pour the batter. Sprinkle a few drops of water — if they sizzle and evaporate immediately, the temperature is right.
