Jackfruit Seed Mango Curry
Cooked low and slow until the masala melds into the gravy, this jackfruit curry carries the unmistakable warmth of Kerala spices — black pepper, curry leaves, and coconut. Pair it with steaming rice and a crisp pappadam.
Ingredientsfor 4 servings
- 2 cup Jackfruit seeds peeled and sliced, Chakkakuru
- 1/2 cup Raw mango — chopped
- 1 cup Coconut — grated
- 1/4 tsp Turmeric powder
- 5 nos Green chillies — slit
- 1/2 tsp Cumin seeds (Jeerakam)
- 1 tsp Mustard seeds
- 1 tsp Shallots — chopped (Kunjulli)
- Curry leaves, to taste
- Oil, to taste
- Water, to taste
- Salt, to taste
Preparation
Step 1
For preparing jackfruit seed mango curry, cook jackfruit seeds in water and salt.
Step 2
When it is half cooked add in raw mango pieces.
Step 3
Grind coconut, turmeric powder, green chillies and cumin seeds to a fine paste.
Step 4
Mash the cooked ingredients.
Step 5
Boil the mashed mixture and ground ingredients with a little water. take it off the heat.
Step 6
Let the mustard seeds crackle in oil. Then add in shallots and curry leaves. Pour this into the above curry.
Step 7
Jackfruit seed mango curry is ready.
Tip
The oil separating from the masala is your signal that the base is properly cooked. Do not add the main ingredient before you see those pools of oil on the surface.
