Jackfruit - Rich Nuts Kheer
A festive Kerala payasam that demands patience and rewards it generously. Milk is simmered for the better part of an hour, thickened with care, sweetened with jaggery or sugar, and served with a prayer that there are leftovers.
Ingredientsfor 2 servings
- 1/2 cup Ripened Jackfruit — chopped
- 2 cup Milk
- 2 nos Cardamom seeds — crushed
- 1 tbsp Blanched almonds
- 1 tbsp Pistachio nuts
- 1 tbsp Cashew nuts
- Saffron A pinch
- Sweetener of your choice According to your taste — optional
Preparation
Step 1
1) Blend jackfruit pieces into a fine paste. 2) Put milk and cardamom in a pan. Bring to boil. 3) Add jackfruit paste and Stir everything together thoroughly till it gets blended well with milk. 4) Chop all the nuts. 5) Add chopped nuts and saffron to the boiling milk mixture and simmer for 3-4 minutes. 6) Add the sweetener and stir until completely dissolved. 7) Remove the kheer from heat. :- Serve either warm or chilled.
Tip
Keep stirring throughout — the cream that forms on the sides should be scraped back in. That is where the richness comes from.
