Idiyappam Egg Upma (Step By Step Photos)
Lacy edges, spongy centre — appam is fermented rice batter swirled in a curved pan until it forms a bowl-shaped pancake. The slight tang from fermentation pairs perfectly with a coconut stew or egg curry.
Ingredientsfor 2 servings
- 6 Idiyappam
- 2 Onion
- 4 Chillies
- Curry leaves, a few
- ½ tsp Mustard
- ½ tsp Turmeric powder
- 2 Egg
- Oil, to taste
- Salt, to taste
Preparation
Step 1
Cut the idiyappam into small pieces.
Step 2
Warm the oil in a pan, add the mustard and let it spurt.
Step 3
Add the onions, chillies and curry leaves.
Step 4
Add the turmeric powder and sautT for a minute.
Step 5
Add the egg.Scramble it.
Step 6
Add the idiyappam and mix it well. Serve hot.
Tip
A well-seasoned appachatti is worth the investment. The appam should release from the pan without any resistance.
