Hot Oyster Or Crab Meat Masala
Fresh crab cooked the Kerala way — with coconut, curry leaves, and a tartness that comes from kudampuli or tamarind. Coastal Kerala cooking at its simplest and best.
Ingredientsfor 4 servings
- 3 - Cleaned Oyster or Crab meat canned
- 11/2 tsp Turmeric powder
- 2 inch Ginger
- 8 - Garlic pods
- 11/4 tbsp Pepper powder right! we need lots of pepper for this recipe
- 1 nos Red onion
- Green chillies A, a few
- 1/2 tsp Fennel seeds (Perinjeerakam)
- 1/4 cup Coconut — grated
- 1/2 tsp Cumin seeds (Jeerakam)
- Curry leaves A, a few
- Salt, to taste
Preparation
Step 1
If using Crab make sure to use only its meat and not with whole shell.
Step 2
Cook oyster meat together with little turmeric, little bit of ginger, lots of pepper, 5 cloves of minced garlic and salt on low heat without water until all the natural water in the meat disappears.
Step 3
Fry the red onion, green chilly and rest of the ginger chops, little coconut chops & fennel seeds seperately.
Step 4
Stir in the cooked meat into it and fry.
Step 5
Grind rest of the coconut, remaining turmeric & garlic and cumin seeds in a blender.
Step 6
Do not grind to a paste ( just as needed for thoran).
Step 7
Add this to the above and fry.
Step 8
Add curry leaves. E N J O Y !
Tip
Never stir a fish curry with a spoon. Shake the pot gently to coat the pieces — stirring breaks them apart.
