Hot And Spicy Modha Fish Fry
Kerala-style dry fry where fish is cooked down until all the moisture evaporates and what remains is intensely flavoured, slightly caramelised, and impossibly moreish. Best with parotta or plain rice.
Ingredientsfor 2 servings
- 2 Modha fish
- 1 tsp Chilli powder
- 1 tsp Turmeric powder
- 1 tsp Pepper powder
- 1 tsp Salt
- Oil to fry
Preparation
Step 1
Wash,clean and cut modha fish into medium pieces,mix turmeric powder and salt.
Step 2
Next, add pepper powder and chilli powder. Stir everything together thoroughly and marinate for 5 minutes.
Step 3
Warm the oil in a kadai and fry this marinated fish pieces till it goes golden brown.
Step 4
When it becomes golden colour we can take this with a strainer.
Step 5
Now hot and spicy modha fry is ready to serve.
Tip
A heavy-bottomed pan or cast iron skillet gives you the best results for a proper Kerala fry. Thin pans burn the spices before the meat dries.
