Homemade Cake
A traditional Kerala sweet that balances richness with restraint. Made with jaggery, coconut, and a careful hand, the sweetness is warm rather than overwhelming — the kind of flavour that lingers.
Ingredientsfor 6 servings
- 1½ cup Butter
- 2½ cup Sugar confectioner`s
- 7 piece Egg yolks
- 4½ cup Flour Cake flour
- Salt ¾ tsp
- 2½ tsp Baking soda
- 1¾ cup Milk
- 1½ tsp Vanilla extract
Preparation
Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2
Grease and flour three 8 inch round pans.
Step 3
Sift flour before measuring; resift with salt and baking powder at least twice more.
Step 4
Beat egg yolks until very thick and pale - approximately 5 minutes with a mixer on high speed.
Step 5
In a large bowl, cream butter and sugar. Blend in eggs.
Step 6
Fold sifted mixture, alternately with milk, into creamed mixture.
Step 7
Stir in vanilla.
Step 8
You can also use food coloring to make multi-colored multi layered cake.
Step 9
Pour batter into prepared pans.
Step 10
Bake for 25 - 30 minutes, until cake springs back when touched.
Step 11
Cool in pans for about 10 minutes.
Step 12
Turn out, and cool on wire rack.
Step 13

Tip
Ghee quality matters enormously in traditional sweets. Use homemade ghee if you can — the flavour is incomparably richer.
