Home Made Chilly Egg
A quick and satisfying egg dish that proves you do not need expensive ingredients to eat well. Boiled eggs in a spiced gravy, or scrambled with onions and curry leaves — simple Kerala cooking at its most practical.
Ingredientsfor 2 servings
- Capsicum : 1 no
- Green chilli : 1 no
- Ginger : 1 inch
- Garlic : 3 nos
- Onion : 1 no
- Soya sauce : 1 tsp
- Egg : 2 nos
- Oil : 2 tsp
- Salt, to taste
Preparation
Step 1
Chop onion, capsicum, garlic, ginger and chillies.
Step 2
In a small bowl beat the eggs with salt and steam it.
Step 3
Set a pan on the stove, add oil, then fry the ginger, garlic and chillies.
Step 4
Once the color changes add the onions and sauté.
Step 5
Add the capsicum and cook for a minute and then add the salt and soya sauce.
Step 6
Add the steamed eggs cut into small cubes and fry.
Step 7
Fry for about a minute and serve hot.
Step 8
Note:Instead of green chillies, red chillies can be grounded and the paste can be added. This is for spice lovers as the name suggest.
Tip
Hard-boil the eggs first, then make shallow cuts on the surface before adding them to the gravy — this lets the masala flavour penetrate inside.
