Green Tomato Pickle
Sun-soaked and fiery — this tomato pickle is the small jar that sits on every Kerala dining table and makes plain rice taste complete. A little goes a long way.
Ingredientsfor 10 servings
- 1 Lb Green tomatoes Pachha Thakkali
- 1 tsp Turmeric powder
- 3 tsp Salt
- 3 tsp Mustard seeds
- 2 tsp Red chilly powder
- 3 tsp Oil
Preparation
Step 1
Clean tomatoes and cut them into medium size pieces.
Step 2
Add turmeric powder and salt.
Step 3
Powder mustard seeds and add this powder to tomatoes followed by red chilly powder.
Step 4
Stir everything together thoroughly.
Step 5
Add oil and leave it for 1 day.
Tip
Mustard oil needs to be heated to smoking point and then cooled before adding to the pickle. This removes its pungent raw flavour.
