Green Peas Egg Curry
A typical kerala style curry. The egg and green peas make an excellent combo. This is a very simple and awesome curry for appam, chapathi.
Ingredientsfor 6 servings
- 6 Boiled egg
- 1 cup Cooked green peas
- 1 tsp Mustard
- 1 tsp Oil
- 5 Curry leaf
- 2 Red chilly
- 1 tsp Salt
- 1 tsp Coriander powder
- 1 tsp Chilli powder
- 1 tsp Turmeric powder
- 1 cup Coconut milk
- 1 cup Water
Preparation
Step 1
Pour oil into a kadai and heat it add mustards.When mustard allow to crackles add red chilli and curry leaf.Stir for 2 minutes.
Step 2
Add onions and cook for 2 more minutes.
Step 3
Add chilli powder,turmeric powder and coriander powder and chilly. cook for 1 minute.
Step 4
When onion becomes slight brown colour we can add little salt to this.
Step 5
Add i cup water to this and let it bubble for 5 minutes.
Step 6
Add cooked green peas to this and let it bubble for 2 minutes.
Step 7
We can add boiled eggs and 1 cup coconut milk to this.
Step 8
Let it bubble for 2 minutes until gravy becomes thick.
Step 9
Whe gravy becomes thick we can switch off gas stove.
Step 10
Now hot green peas egg curry is ready to serve.
Tip
Frying the boiled eggs briefly before adding to the curry gives them a golden skin that holds up better in the gravy.
